Lemon Chicken

Simple.  Easy.  Healthy.  This is one of my favorite chicken recipes.  The lemon permeates through the chicken as it bakes in the oven.  Serve alongside an arugula salad to complete the meal.

Prep 10 min Cook 45minutes Makes 7+ servings

Ingredients

3 lbs of boneless, skinless chicken breasts

2 lemons

4 Tbps of olive oil, divided

Salt and pepper

1 sprig of fresh rosemary

Thinly slice two lemons.  In a 9 by 13 inch baking dish, pour 2 tablespoons of olive oil.  Place a single layer of the sliced lemons over the oil and cover the bottom of the dish.

Meanwhile slice the thick chicken breasts horizontally to make them a thinner cut.  Place them over the lemons slices, being careful not to crowd the baking dish.

Bake in oven at 350 degrees for 45 minutes.
