Thanksgiving Egg Muffins

Ingredients

2 cups of baked sausage stuffing

1 cup of shredded mozzarella cheese

4 eggs

2 cups of whole milk

1 1/2 cups of flour

2 teaspoons of salt

Cooking spray

Maple syrup

Preheat oven to 375 degrees.  Generously spray two muffin tins with oil.  Add a tablespoon of sausage stuffing to each cup.  Top with a sprinkle of cheese.

In a blender, crack 4 eggs.  Add milk, flour and salt.  Blend until frothy.

Pour over stuffing mixture until 3/4 full.  Bake for 30 minutes.

Enjoy with a side of maple syrup for dipping.
