Turkey Fried Rice

Ingredients

3 cups of cooked rice

2 cups of cooked shredded turkey

1/4 cup of oil (divided)

2 tsp of sesame oil

2 red bell peppers, diced

1 large onion, diced

1 8oz can of water chestnuts, chopped

Green onion, sliced

Cilantro, chopped

Over high heat, warm 3 Tbsp of oil in a saucepan.  Add bell pepper and onion and cook until the pepper starts to char and the onion becomes translucent.  Remove from heat. 

Meanwhile, in a large skillet, heat remaining oil and add shredded, cooked turkey.  Allow the turkey to crisp before stirring and cooking the other side.  Remove from heat and set the turkey aside.

Combine all ingredients together in one large saute pan.  Add soy sauce and stir over medium heat until all the rice has absorbed the liquid.  Remove from heat and serve on a large platter, topped with green onion and cilantro.
