Wild Rice and Turkey Soup

Prep 15 min  Cook 45 min  Makes 7 servings

Ingredients

Carcass of one whole turkey

12 cups of water

2 cups chopped cooked turkey

3 tbsp of oil

3 diced carrots

4 stalks of celery, sliced

1 large yellow onion

2 garlic cloves, chopped

salt & pepper

1 6 oz box of packaged wild rice & seasoning

 

With the left over bones from your turkey dinner, put them in a large stockpot.  Cover it with 12 cups of water and bring to a boil.  Once boiling, reduce to a simmer and heat for at least 4 hours.  Remove bones and skim off any fat.  Set aside.

In a separate skillet over high heat, add oil, onion, celery and carrots.  Salt and pepper to taste.  Saute for about 5 minutes.  Add garlic and cooked turkey.  Open spice packet from the box of wild rice and stir into the mixture.  Heat all the way through, about 3 more minutes. 

Turn the heat to medium under the stock pot.  Add the skillet ingredients to the stock pot along with the box of wild rice.  Allow the soup to heat and cook the rice another 30 minutes.
