Roasted Chicken Breasts 101

If you buy chicken breasts with the skin on, it will roast in its own natural juices, creating a moist and flavorful way to enjoy chicken.  Eat it as an entree tonight, and pull apart the left over chicken for a pasta with red pepper pesto tomorrow night.

Prep 10 min Cook 1 hour Makes 7+ servings

Ingredients

2-3 lbs of chicken breasts, bone-in, skin on

4  Tbsp of butter

salt and pepper

Preheat oven to 350 degrees. 

Clean chicken and pat dry.

Melt butter.  Baste each breast with the butter and then season with salt and pepper.

Bake 1 hour or until the internal temperature reaches 165 degrees.  Let sit for 10 minutes before serving.
