Meatloaf 101

Meatloaf is something we all grew up having for dinner. My grandmother made it with crushed up Saltine crackers instead of Panko breadcrumbs. Enjoy this basic recipe and look for fun rollover meals the next few days!

Ingredients:

2 lbs of ground beef

2 cups of Panko breadcrumbs

3 eggs

1 cup of milk

2 tsp of Worcestershire sauce

2 Tbsp of dried parsley

1 medium yellow onion, diced

1- 14.5 oz can of diced tomatoes, drained

2 Tbsp of vegetable oil

salt and pepper to taste

1/2 cup of ketchup

Preheat oven to 350 degrees.

In a large skillet over medium heat, saute onion in oil until tender.  Add drained canned tomatoes and continue to cook for 3 more minutes.  Removoe from heat and set aside to cool.

In a large mixing bowl, add ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, salt, pepper and parsley.  Combine gently, careful not to over-work the meat as it could become tough and dense.  Add cooled onion and tomatoes.  Combine.

Prepare two greased loaf pans and divide mixture evenly.  Press down gently to form an even top surface.  Spread ketchup over the top.

Bake for 35 minutes.  Let rest before slicing.

Tacos 101

Tacos tonight.  Taco salad tomorrow for lunch and nachos for the weekend.  Sounds like a plan!

Ingredients:

1 lb of ground beef

1 yellow onion, diced

1 red bell pepper diced

1 jalepeno, seeded and diced

1 Tbsp of vegetable oil

2 Tbsp of salt

1 18 oz can of diced tomatoes

3 Tbsp of chili pepper

2 Tbsp of paprika

2 Tbsp of cumin

1 tsp of cayenne pepper

1/2 cup of water

In a skillet, saute onion and peppers in oil.  Add ground beef and cook 5-10 minutes or until meat is brown.  Add diced tomatoes spices, salt and water.  Simmer 20 minutes.

Scoop into taco shells and top with sour cream, salsa, cheese and shredded lettuce.
