Mushroom Swiss Burgers

Ingredients

2 lbs of ground beef

1 lb of fresh white mushrooms, sliced 

Kosher Salt

Ground Pepper

1 Tbs of butter

4 tsp of Marsala Wine

1 large onion, diced

7 slices of swiss cheese

1/4 cup of mayo

3 Tbsp of Worcestershire Sauce

1 Tbsp dijon mustard

Burger buns

In a saute pan over medium heat, melt butter.  Add mushrooms and diced onion.  Sprinkle with salt and pepper to taste.  Cook for 3 minutes, making sure that the mushrooms still are firm and have texture.  Add marsala wine and cook another 2 minutes until liquid has evaporated. 

Transfer mushroom mixture to a bowl and keep cover with foil.

Preheat the grill.  Spray with non-stick oil.  Form ground beef into seven equal patties, between 1/4 and 1/2 pound and grill according to desired temperature, 5-8 minutes per side.  (Rare 125 degrees, Medium 135 degrees, Well done 155 degrees.)  Meanwhile, make the Worcestershire mayo by mixing the last three ingredients together.   After flipping the burgers and continuing to grill to temp, add the mushrooms on top and a slice of swiss cheese.  Close grill cover and cook another 2 minutes.

Serve on hamburger buns with a light spread of mayo.
