Pork Chops Gremolata

Ingredients

7 grilled pork chops (made per spotlight ingredient recipe)
1 cup olive oil
2 shallots, diced
4 cloves of garlic, smashed
1 tsp of lemon zest
1/2 cup of sherry vinegar
Kosher salt and pepper to taste
3/4 cup of whole, unsalted, raw almonds
2 sprigs of fresh rosemary
1 bunch of fresh basil
1 bunch of fresh cilantro
In a food processor, combine shallots, garlic, salt, pepper, almonds, rosemary, basil and cilantro. Replace lid and use the liquid tube to gradually pour in olive oil as you pulse the mixture. Continue to pulse until the mixture becomes a rough paste.

Place a grilled pork chop on a plate and top with a tablespoon of the gremolata
