Sausage & Mushroom Grilled Pizza

Grilled pizza. The dough is crispy on the outside, chewy on the inside. Just like our favorite coal-fired pizza restaurant!

1 refrigerated pizza dough

a sprinkling of flour

1 small can of pizza sauce

2 Tbsp of olive oil

1/2 lb of sliced mushrooms

2 Tbsp of butter

1/2 of a yellow onion, sliced

2 cups of mozzarella cheese, shredded

3 links of Italian sausage, removed from casing and crumbled

2 tsp of oregano

1 cup of ricotta cheese

2 cups of mozzarella cheese, shredded

Salt to taste

Preheat the grill.

Remove dough from packaging and roll out on a cutting board dusted with flour.  Baste olive oil all over the dough and then transfer it to the grill for cooking.  Cook for 2-3 minutes on each side or until you begin to see char marks.  Transfer to a cookie sheet lined with parchment paper.

Meanwhile, saute mushrooms and onion in butter for 3-4 minutes.  Set aside in a bowl and allow to cool.  In the same pan, cook sausage and set aside.

Preheat oven to 450 degrees.

To build the pizza, begin by spreading the tomato sauce over the grilled pizza crust.  Sprinkle with mozzarella cheese all over the crust.  Next, top with sautéed mushrooms, onions, and sausage.  Spoon 4-5 dabs of ricotta cheese randomly around the pizza.  Sprinkle with salt.  Place in oven and bake for 10 minutes, or until the cheese starts to bubble and brown.

Season with oregano and salt.
