Short-Cut Ravioli

What if you could make homemade ravioli without having to make pasta and cut it into neat little squares?  Well- it’s not exactly pasta- it’s wonton wrappers.  And yes, these make amazing ready-to-assemble ravioli squares.  Check this out!

Ingredients:

1 package (48) wonton wrappers

16 oz of ricotta cheese

3 eggs

1 cup of shredded mozzarella cheese

(Heat a large pot of water on the stove while you assemble the ravioli.)

In a large bowl, mix ricotta, 2 eggs and shredded cheese.  Set aside.

Prepare an egg wash by beating one egg with one tablespoon of water.  (This will be used with a basting brush as “glue” to seal the wonton raviolis.)

Lay out squares of wonton wrappers on a large, clean surface.  Scoop 1 tablespoon of cheese mixture into the center of a wonton square.  Baste around the edges with an egg wash.  Place an other wonton wrapper on top and seal with the tongs of the fork.

Place only a few raviolis in the boiling water at a time.  When the raviolis rise to the top, they are ready to be removed (about 3 minutes.)

Remove from the boiling water and allow to drain on a wire rack.  Serve with your favorite toma
