Chicken Avocado BLT

We all love BLTs.  This spin on the classic includes grilled chicken (see Citrus Tequila Chicken recipe) and fresh avocado.  Serve it on a toasted ciabatta bread with dijon mustard aioli.

Ingredients:

2 sliced chicken breasts (from Citrus Tequila Chicken recipe)

4 Focaccia Bakery Buns

2 avocados, sliced

1 head of butter lettuce

2 tomatoes, sliced

8 slices of bacon, cooked

1/4 of a red onion, thinly sliced

3 Tbsp of mayonnaise

2 Tbsp of dijon mustard

Slice the bakery buns in half.  Spread mayo and dijon mustard on each half.

Layer lettuce, tomato, bacon, chicken, onion and avocado.  (You may wish to salt the avocado slices.) Top with other half of bun.
