Pasta Soup. I have no time go grocery shopping, so it’s up to what’s in my pantry for dinner tonight. Here’s my favorite “oh no, I have nothing for dinner” recipe. Enjoy!
Ingredients:
2 Tbsp of olive oil
1 large yellow onion, diced
5 carrots, peeled and diced
4 stalks of celery, sliced
3 links of Italian sausage, removed from casing and crumbled
1- 28 oz can of diced tomatoes
1 Tbsp of salt
1 Tsp of black pepper
3 tsp of dried oregano
3 tsp of dried basil
8 cups of chicken broth
1 box of Ditalini pasta
In a large pot, begin to cook onion in the olive oil. Add carrots and celery. Cook until tender, about 10 minutes.
Meanwhile, in a skillet over medium heat, brown the sausage. When fully cooked, add to the pot of vegetables.
Add diced tomatoes, seasonings and chicken broth. Bring to a boil. Add pasta and lower heat to medium-low. Allow the pasta to cook until al-dente or 15 minutes.
Serve with a drizzle of olive oil and grated parmesan cheese.
